Welcome to my blog! I want to share my epic journey to discovering healthful and flavourful food while living gluten-free and with severe food allergies. Navigating shopping and cooking has always been a challenge for me. Actually just getting into the grocery stores with fresh fish markets was dangerous. I once left a grocery store by ambulance because the fresh shrimp sent me into an allergic reaction. I want to share my success stories so others can avoid the pitfalls and challenges related to shopping and cooking healthy gluten-free and allergy free meals.
My earliest versions of Lemon Chicken were quite simple with pounded out chicken breasts, coated with white rice flour, salt & pepper and fried on the stove with a little olive oil.
Cooking double batches at dinner to use as leftovers or to re-purpose some for another meal is a great way to save time and work more efficiently in the kitchen. This meal planning strategy really works at cutting time spent on prepping, cooking, and the dreaded cleanup.
