Once you taste this crispy crusted chicken, you will never eat any other kind of chicken strips again. They have a rich, elevated flavour, crispy coated strips of chicken breast and they are so easy to make. Honestly, it only involves chopping your boneless chicken breasts into strips and coating them with your package of seasoning. Southern Baked Chicken, where have you been all my life?

Southern Baked Chicken is one of Epicure’s Meal Solutions that meets their ‘Raw to Ready in 20 minutes’ time frame and is completely healthy. You can bake healthier chicken pieces, popcorn chicken or chicken fingers. Bake a Southern style chicken with all the flavour of deep fried chicken without the added fat and extra calories. It’s completely gluten-free made with chia and psyllium husk. Both chia and psylllium husk have healthful benefits. Chia seeds are packed with essential nutrients, such as omega-3 fatty acids, antioxidants, and provide fibre, iron and calcium. They are known to help reduce the risk of heart disease and diabetes.  Psyllium husk is made from the husks of seeds from the Plantago ovata plant and is a native plant in Asia. India is the largest grower and produces most of the world’s supply. Its health benefits includes lowering cholesterol, promoting fullness, lowering blood sugar and is good for general bowel health.

The rest of the seasoning for this pack includes a perfect blend of pepper, celery seed, garlic, onion, paprika, rosemary and sea salt. When you open the pack, be ready for a beautiful aroma. And best part, all you need to get this flavour is coat your chicken. For my chicken strips, I cut boneless, skinless breasts into pieces and placed in a bag. I poured in my seasoning and squished it around to fully coat each piece. I didn’t add anything beyond that. I placed the pieces on my raised racks (I wanted crispy pieces and wanted any liquids to drip off) and cooked for 15-20 minutes.

You can eat it plain with all its flavours or whip up a dipping sauce. Either way this is a fabulous meal!
